An “Arctic” bread formula developed by Research Institute of the Bakery Industry
The formula includes Arctic endemics, Press Service of the Russian Ministry of Science and Higher Education reports.
The “Arctic” bread formula is a mixture of rye and wheat flour, dried cranberry, Iceland moss, and sphagnum moss. The ingredients contain useful bioactive substances, such as polysaccharides, gums, organic acids, as well as macro- and micro-elements.
Research into the product’s nutrition value has shown that it is a source of protein, phosphorus, magnesium and iron, and is characterized by a high content of food fibers and vitamin E.
The government standard for Arctic Bread will come into force in May 2026. It lists the obligatory requirements for bread quality indicators, formulas, and production methods.
